Fruit-driven and full-bodied with lush aromas of cassis, blackberry and candied cherry, our Big Ass Cab is a perfect complement to any rich or savory meal. This wine was fermented warm (75-85°F) with regular gentle mixing to ensure good extraction of tannin and color. The wine was aged in a mix of French and American oak barrels for an average of 17 months, which gives the wine balanced toasty oak and vanilla characters. The palate exhibits concentrated blackcurrant and ripe cherry flavors that are layered with some minerality in the mid-palate.
Wine Enthusiast The name is apropos, for this is a big, fleshy wine, almost like one of those Aussie Shirazes in jammy fruit, although it’s Cabernet all the way with blackberries and currants. With fine tannins and a smooth finish, it shows quite a bit of sophistication. Score: 87. —Steve Heimoff, November 15, 2007.Customers who purchased this item also bought:
